Why this place matters
Prohibition looks easy to categorize at first: a 1920s-inspired lounge, cocktails and a rooftop in Town Madison. Then you read the food menu. Brisket queso shares space with pork bao buns, Conecuh sausage turns up in pastalaya, and the kitchen wanders through everything from ginger-scallion noodles to BBQ tofu bánh mì. That’s what makes Prohibition more interesting to me than the theme. It could have coasted on burgers, drinks and a rooftop view, but the food refuses to stay in one lane. Come for the rooftop cocktails, absolutely. Just don’t treat dinner like the opening act.
