THE STORY

Why this place matters

Rosie’s has now served Huntsville for more than 30 years. That makes it an institution—but longevity is only part of the story. For generations of local families, Rosie’s has marked birthdays, club dinners, first dates, visiting relatives and ordinary meals that became traditions before anyone realized they were making them. For me, it holds two versions of the girl I was becoming. One sat with her Spanish Club, already dreaming about a world larger than Huntsville and preparing to study abroad in Spain. The other sat across from her mother, dipping warm tortillas into Mexican butter and turning white queso into a family ritual. I eventually crossed the ocean. I learned more about Spain, Spanish food and the enormous distance between Spanish cuisine and Alabama Tex-Mex. But Rosie’s still belongs to the beginning of that story—and to the Huntsville life Mom and I built together before I left. Some people inherit formal family recipes. Mom and I had an ordering system. White queso. Shrimp fajitas. Double rice. Extra Mexican butter. Warm flour tortillas. That was ours.
